Recipe Swap! We love it!

1 jam swiss roll.  Slice and place this in the bottom of your glass serving dish.  Sprinkle with sherry.  Make up a port wine jelly and pour over the cake.  Allow to partially set.  Sprinkle a 750ml tin of fruit (drained) over the jelly before it has completely set.  Pour custard on top and layer cream on top of that.  Sprinkle a flake bar over the top.

4 tubs pre-made jelly cups

2 packs lammington jelly fingers

80 ml sweet sherry

2 punnets stawberries

2 punnets blueberries

1/2 lt - 1 lt custard

300 ml cream (whipped with 2 Tbs sugar + vanilla)

1 block dark chocolate

Chuck chopped lammingtons into a giant bowl.  Chuck in some strawberries, some of the diced jelly, some of the blueberries, half of the sherry and half of the custard.  Repeat.  Put all the cream on top.  Decorate with the remaining strawberries and blueberries.  Then, use a veggie peeler to flake the chocolate over the top.  Put it in the fridge for 4 hours.

N.B. you need gem irons

40g butter

1/3 cup caster sugar

1 egg

1 1/2 cups SR flour

1 tsp baking powder

1 cup milk

Cream butter and sugar, then beat in egg.  Sift in flour and baking powder and add milk in 2 batches.

Lightly grease the gem irons. Drop batter into the irons and bake for 8-10 mins in a hot oven.  Cool on a rack.

Join 2 gem cakes with mock cream (standard recipe).

Mix pink jelly crystals with 1 cup boiling water and 1/2 cup cold water.  Dip the joined cakes into the jelly mix and allow to drip on a wire rack.  Then roll the cakes in coconut.

Preparation Instructions

Mix together all ingredients until well combined. Pinch off small amounts of the sausage dough, forming into 1 – 1/2″ balls. Place on a rimmed baking sheet and bake at 350F until golden brown, 20-30 minutes. These are equally wonderful popped in the microwave for a few seconds to heat them up after being refrigerated.

You’re right these are the best sausage ball recipe I have eaten. I have been making them for years and everyone loves them. I use hot sausage and then sprinkle some red pepper flakes into the baking mix also – I like it hot. They also freeze really good (after they are cooked), then you can take out how many you want by the time you get to work with them they are defrosted and just heat in microwave a few seconds. (I make a bunch and almost always have some in the freezer.) – I want some now and of course have none left….. must make more.

These were very, very dry for me. After baking a couple test balls and only being able to taste the biscuit mix I added an egg mixed with 1/2 cup milk to the sausage mixture. It did help them become a bit more moist. I may try again with only 1 cup biscuit mix and add some seasoning to give these guys some flavor. However, a couple people did ask for the recipe. I love the concept though. Thanks for sharing.
